Twice-Baked Avocados

  1. Preheat oven to 375 F. Lightly spray the cut side of the avocado halves with olive oil.
  2. Place on a baking sheet, cut side up, and bake for 10-12 minutes.
  3. Remove from oven and allow to cool slightly, so that they can be handled.
  4. Keep the oven on.
  5. Gently remove flesh from avocados with a fork or spoon, preserving the skin as a bowl.
  6. Set the skins aside.
  7. Place avocado flesh into a bowl and mash well with a fork.
  8. Add remaining ingredients and mix well.
  9. Transfer mixture back into the avocado skins and place back onto the baking sheet.
  10. Top each with a sprinkle of additional cheese if desired and return to oven.
  11. Bake for an 5-8 additional minutes.
  12. Remove from oven and serve immediately with tortilla chips for dipping.
