South Indian Lentil Stew (Crockpot)
- 2 cup Dry Lentils, Red
- 15 oz Canned Diced Tomatos
- 1/2 packages Fresh Spinnach
- 4 cup Chicken Broth
- 1 small Onion, Diced
- 1 tbsp Ginger
- 1 tbsp Garlic, Minced
- 1 tbsp Curry Powder
- 1 tsp Mustard Seed
- 1/2 tsp Ground Cumin
- 1/2 tsp Ground Coriander
- 1/4 tsp Cayenne Pepper
- 1 tbsp Salt
- Combine all ingredients in a slow cooker.
- Cook until thick and creamy and lentil are soft, about 3 hours on high or 6 hours on low.
- Season to taste with more salt and pepper, if desired.
- Can add 2 tsp fresh lemon juice and 1/3 cup fresh cilantro.
- Yields about 1 cup per serving.
