South Indian Lentil Stew (Crockpot)

  1. Combine all ingredients in a slow cooker.
  2. Cook until thick and creamy and lentil are soft, about 3 hours on high or 6 hours on low.
  3. Season to taste with more salt and pepper, if desired.
  4. Can add 2 tsp fresh lemon juice and 1/3 cup fresh cilantro.
  5. Yields about 1 cup per serving.
