Swiss Broccoli Soup
- 1 c. instant nonfat milk
- 1/2 tsp. salt
- 1/8 tsp. pepper
- 1/8 tsp. garlic powder
- 1 (10 oz.) pkg. frozen broccoli, cooked and drained
- 2 1/4 c. water
- 1 (10 3/4 oz.) condensed chicken broth
- 1/4 c. butter
- 1/4 c. green onion, chopped
- 1 1/2 c. (6 oz.) shredded Swiss cheese
- Combine milk, flour and seasonings in a 3-quart heavy saucepan.
- Stir in water and broth until smooth.
- Bring to a boil over medium heat, stirring constantly.
- Boil and stir 1 minute. Meanwhile, saute onions in butter until tender, about 3 minutes. Stir onions and cooled broccoli into the thickened sauce. Gradually stir in cheese until melted, if necessary,
- return to low heat to finish melting the cheese.
- Do not boil.
- Serve immediately.
