Lori's Turnip Cake
- 5 dried Chinese mushrooms
- warm water (to cover)
- 1 cup water
- 1 pinch sugar
- 2 turnips (peeled, shredded)
- 1 tablespoon canola oil
- 3 dried Chinese sausage (chopped)
- 1 cup dried shrimp
- 1 small shallot (sliced thin)
- salt & fresh ground pepper (to taste)
- 12 lb rice flour
- 1 tablespoon canola oil
- 1 garlic clove (minced)
- 1 Thai chile (seeded, minced)
- 2 tablespoons soy sauce
- 1 drop sesame oil
- 1 pinch sugar
- Soak mushrooms in warm water for 20 minutes.
- Drain.
- Rinse.
- Squeeze dry.
- Chop.
- Bring the water and sugar to a boil.
- Add turnips.
- Simmer 5 minutes.
- Set aside.
- Heat oil in a skillet.
- Add sausage, shrimp and shallots.
- Saute 5 minutes.
- Season.
- Stir in mushrooms, turnips and flour.
- Mix well.
- Pour into a sprayed 9 inch cake pan.
- Steam 50 minutes.
- Let cool.
- Cover.
- Chill 1 hour.
- Bring back to room temperature.
- Slice.
- Heat oil in a skillet.
- Fry slices until golden.
- Combine the garlic, chili, soy sauce, sesame oil and sugar.
- Serve with slices.
