Prosciutto Cantaloupe Bites
- 16 cubes Cantaloupe Cubes
- 1 package Prosciutto (minimum 8 Slices)
- 1 Tablespoon Lime Juice
- 2 teaspoons Extra Virgin Olive Oil
- 1 pinch Crushed Chili Flakes
- 1 Tablespoon Chopped Mint
- 8 sticks Bamboo Skewer
- Combine lime juice, olive oil, and chili flakes, whisk well.
- Set aside.
- Cut prosciutto in half lengthwise.
- You will get 2 slices out of 1 slice.
- Wrap one cantaloupe cube with presliced prosciutto and secure it on a skewer one at a time.
- Put 2 wrapped cantaloupes per skewer.
- Arrange them on a serving plate and drizzle with oil mixture.
- Sprinkle finely chopped mint when serving.
