Skillet Lasagna
- 1 lb lean ground beef, or part ground turkey
- 1 envelope spaghetti sauce mix
- 1 pound nonfat cottage cheese
- 4 cups medium-width noodles, uncooked
- 1 1/2 tsp dried basil
- 1/2 tsp dried oregano
- 1/2 tsp salt
- 3 Tbsp chopped fresh parsley
- 1 (14 oz) can tomatoes with juice
- 1 (8 oz) can tomato sauce
- 1 1/2 cups water, beer or wine
- 4 oz mozzarella cheese, cut in thin pieces
- In a 10-12 skillet with a tight fitting lid, brown the ground meat, stirring occasionally to break up lumps; drain off any drippings.
- Spread the browned meat evenly in skillet and sprinkle half the spaghetti sauce mix.
- Spoon the cottage cheese over meat; top with the uncooked noodles, the dried herbs, salt and parsley. Press down with the back of a mixing spoon.
- Sprinkle evenly with the remaining dry spaghetti sauce seasoning mix.
