Baked CRACKER BARREL Cheddar Puff

  1. COOK carrots until tender; drain.
  2. Puree carrots with eggs and milk until smooth.
  3. Stir in 1 cup (250 mL) cheese, 3/4 cup (175 mL) of the cracker crumbs, salt, pepper and nutmeg.
  4. SPOON into a greased 1 qt (1L) casserole dish.
  5. Sprinkle with remaining cheese, breadcrumbs and parsley.
  6. Bake at 350F (180C) for 30 minutes.
