Ratatouille Sandwiches

  1. Slice all the vegetables.
  2. Spread some tomato sauce over the bottom of a baking dish.
  3. Arrange the vegetable slices concentrically in the baking dish.
  4. Drizzle with oil and sprinkle with dried thyme, salt and pepper.
  5. Cover with parchment paper and bake for 45 minutes at 180 degrees C (355 degrees F).
  6. Spread some cream cheese over each slice of bread.
  7. Place some ratatouille over each sandwich.
  8. Top with fresh basil.
