Ratatouille Sandwiches
- 1 whole Eggplant
- 1 whole Zucchini
- 1 whole Yellow (summer) Squash
- 3 whole Tomatoes
- 1 whole Yellow Bell Pepper
- 1 whole Red Onion
- 1- 1/2 cup Tomato Sauce
- Grapeseed Oil, For Drizzling
- Dried Thyme, To Taste
- Salt And Black Pepper To Taste
- 1/2 cups Cream Cheese
- 4 slices Bread Of Your Choice, Or More If Slices Are Small
- Fresh Basil, For Garnish
- Slice all the vegetables.
- Spread some tomato sauce over the bottom of a baking dish.
- Arrange the vegetable slices concentrically in the baking dish.
- Drizzle with oil and sprinkle with dried thyme, salt and pepper.
- Cover with parchment paper and bake for 45 minutes at 180 degrees C (355 degrees F).
- Spread some cream cheese over each slice of bread.
- Place some ratatouille over each sandwich.
- Top with fresh basil.
