Microwave Tarragon-Vegetable Medley
- 2 c. cauliflower flowerets
- 1 carrot, cut in strips
- 1 onion, cut in thin wedges
- 2 Tbsp. water
- 1 green pepper, cut into squares
- 1/3 c. ripe olives, halved (optional)
- 1 Tbsp. sugar
- 1 Tbsp. oil
- 1/4 tsp. salt
- 2 Tbsp. wine vinegar
- 1/2 tsp. dried tarragon, crushed
- walnut halves (optional)
- In 1 1/2-quart casserole or baking dish, combine all veggies, except green pepper with water.
- Cook, covered on High about 5 minutes or until almost tender, stirring once.
- Add green pepper. Cover and cook on High 1 to 2 minutes more or until tender.
- Add olives.
- Stir together vinegar, sugar, oil, tarragon and salt; then stir into veggies.
- Cook, covered for 30 seconds.
- Serve hot or cold.
- Garnish with walnuts.
- If serving this cold, just marinate in vinegar dressing.
