Duck Fat Sugar Cookies Recipe
- 2/3 c. chilled rendered duck fat (left over from a roast duck)
- 1/3 c. (5 1/3 tbsp.) butter, soft
- 1 1/2 c. sugar
- 2 lg. Large eggs
- 2 tbsp. lowfat milk
- 1 tbsp. vanilla
- 4 c. flour
- 1 tbsp. baking pwdr
- 1/2 teaspoon salt
- 1/2 c. raisins (opt.), or possibly minced dates
- Mix flour, baking pwdr, salt and raisins or possibly dates together and set aside.
- Mix all other ingredients together then blend both mixtures together.
- Roll rounded tsp.
- into balls.
- Place balls 3" apart on ungreased cookie sheets.
- Flatten with glass dipped in sugar (the edges will crack slightly).
- Bake at 350 degrees for 10 to 12 min till they are pale golden brown.
- Transfer to racks to cold.
- Makes 100 cookies.
