Sausage and Peppers

  1. Heat a large nonstick skillet coated with cooking spray over medium-high heat.
  2. Add sausage to pan; cook 8 minutes or until lightly browned, turning occasionally.
  3. Remove from pan; cool slightly.
  4. Cut sausage into 1/2-inch-thick slices.
  5. Wipe pan with paper towels; recoat with cooking spray.
  6. Place pan over medium-high heat.
  7. Add peppers; saute 6 minutes.
  8. Add sausage; saute 2 minutes.
  9. Add garlic; saute 2 minutes.
  10. Add sauce; bring to a simmer.
  11. Reduce heat; cook 5 minutes, stirring occasionally.
  12. Remove from heat.
  13. Add mozzarella, stirring until melted.
  14. Place 1 cup pasta in each of 6 shallow bowls; spoon about 1 cup sausage mixture over each serving.
  15. Sprinkle each serving with 1 teaspoon Parmesan cheese.
