Mini Coconut Creme Tarts
- 1 pkg. (255 g) frozen mini tart shells (18 shells), thawed
- 1 pkg. (4-serving size) Jell-O Vanilla Instant Pudding
- 1 cup cold milk
- 1/2 tsp. coconut extract
- 1/3 cup thawed Cool Whip Whipped Topping
- 2 Tbsp. toasted sweetened flaked coconut
- Bake tart shells as directed on package; cool completely.
- Meanwhile, beat pudding mix and milk in medium bowl with whisk 2 min.
- Stir in extract and Cool Whip.
- Refrigerate 15 min.
- Spoon pudding mixture into tart shells just before serving; top with toasted coconut.
