Mini Coconut Creme Tarts

  1. Bake tart shells as directed on package; cool completely.
  2. Meanwhile, beat pudding mix and milk in medium bowl with whisk 2 min.
  3. Stir in extract and Cool Whip.
  4. Refrigerate 15 min.
  5. Spoon pudding mixture into tart shells just before serving; top with toasted coconut.
