Mexican Cups of Corn

  1. Heat oil in medium saucepan on medium heat.
  2. Add onions; cook and stir 3 min.
  3. or until crisp-tender.
  4. Add next 3 ingredients; stir.
  5. Bring to boil; cover.
  6. Simmer on medium-low heat 15 min., stirring occasionally.
  7. Serve topped with mayo, cheese and red pepper.
  8. Squeeze lime wedge over each serving.
