Banana Creme Pie

  1. Slice bananas, toss in lemon juice.
  2. Place in bottom of crust.
  3. In double broiler over hot water, combine sugar, corn starch, flour, and salt.
  4. Slowly stir in milk.
  5. Cool until thickened.
  6. Stir 1/2 cup milk mixture back into eggs.
  7. Stirr egg-milk mixture back into remaining milk mixture.
  8. Cook 2 minutes.
  9. Remove from heat and add butter and vanilla.
  10. Cool.
  11. Pour over bananas in crust.
  12. Top with coconut and chill for 4 hours.
  13. Garnish with whipped cream and bananas.
