Gelatin Poke Cake
- 1 package (2-layer size) white cake mix or pudding-included cake mix
- Oil for greasing
- flour for dusting pan
- 1 package (3-ounce size) gelatin, any flavor
- 1 cup boiling water
- 1/2 cup cold water
- Whipped topping for garnish, if desired
- Preheat oven to 350 degrees.
- Prepare cake batter as directed on package and pour into greased and floured 13-by-9-inch pan.
- Bake in oven for 30 to 35 minutes until done.
- Cool cake in pan for 15 minutes; prick with fork at half-inch intervals.
- Dissolve gelatin in boiling water.
- Add cold water and carefully pour over cake.
- Chill three to four hours and garnish with whipped topping if desired.
