Macaroni Patties
- 1/4 c. butter
- 5 Tbsp. flour
- 1 c. milk
- 1 tsp. salt
- dash of paprika
- 1/2 lb. grated American cheese
- 1 1/2 c. cooked macaroni
- 2 Tbsp. chopped pimiento
- 1 Tbsp. chopped parsley
- 1 tsp. grated onion
- fine cracker crumbs
- 1 egg
- 1 Tbsp. water
- Melt butter in top of double boiler.
- Add flour and blend. Add milk, salt and paprika.
- Cook and stir over boiling water until smooth and thickened.
- Add cheese; stir until blended.
- Add macaroni, pimiento, parsley and onion.
- Turn into a well-greased large flat loaf pan.
- Chill until firm.
- Cut into 2-inch squares and dip into crumbs, then beaten egg with water and then again in crumbs.
- Fry in hot fat until a golden brown.
- Garnish with parsley.
