Texas Cream Pie
- 4 eggs, separated
- 1 c. sugar
- 2 tsp. flour
- 2 c. milk
- pinch of salt
- 1 pkg. fun flavored gelatin
- 1/4 c. cold water
- 1/4 tsp. cream of tartar
- 1 tsp. vanilla
- 1 c. heavy cream
- bitter chocolate
- 2 pie shells, baked or 2 graham cracker shells
- Mix flour into 1/2 cup of sugar.
- Beat into egg yolks.
- Slowly stir in milk.
- Add salt.
- Cook slowly over low heat, stirring constantly until it bubbles.
- Remove from heat; stir in gelatin (dissolved in cold water).
- Stir well and chill.
- Add cream of tartar to egg whites.
- Beat stiff.
- Add 1/2 cup sugar gradually, beating well.
- Add vanilla.
- Fold cold custard into this mixture. Pour into 2 graham crusts or 2 baked pie shells (cooled).
- Chill until firm.
- Top with whipped cream and grated chocolate.
