Texas Cream Pie

  1. Mix flour into 1/2 cup of sugar.
  2. Beat into egg yolks.
  3. Slowly stir in milk.
  4. Add salt.
  5. Cook slowly over low heat, stirring constantly until it bubbles.
  6. Remove from heat; stir in gelatin (dissolved in cold water).
  7. Stir well and chill.
  8. Add cream of tartar to egg whites.
  9. Beat stiff.
  10. Add 1/2 cup sugar gradually, beating well.
  11. Add vanilla.
  12. Fold cold custard into this mixture. Pour into 2 graham crusts or 2 baked pie shells (cooled).
  13. Chill until firm.
  14. Top with whipped cream and grated chocolate.
