English Muffin Bread

  1. Combine the first 6 ingredients.
  2. Heat together the milk and water until very warm.
  3. Add liquid to the dry mix and beat well. Stir in 3 cups of white flour to make a stiff batter.
  4. Spoon into three 1-pound coffee cans which have been greased and sprinkled with corn meal.
  5. (Pam simplifies greasing.)
  6. Let rise in a warm place for 45 minutes.
  7. (The loaves should be extended above the top of the cans no more than 1 inch.
  8. Bake at 375u0b0 for 25 to 30 minutes.
  9. Remove from tins and cool on a rack.
  10. Bread should sound hollow when rapped with knuckles.
