Chicken & Bacon Quessadilla
- 1/3 cup Grilled Boneless Chicken Breast
- 1/3 cup Chopped Cooked Bacon
- 2 Flour Tortilla
- 1/2 cup Shredded Cheddar Cheese
- 1/4 cup Shredded Pepper Jack Cheese
- Have all ingredients ready.
- Pre heat a medium skillet at medium heat over stove.
- Lightly brush bottom of skillet with olive oil.
- I used a garlic infused olive oil.
- Place 1 tortilla in skillet.
- Sprinkle 1/4 cup of shredded cheddar and 1/4 cup shredded pepper jack cheese evenly one tortilla.
- Add chicken and bacon on top of cheese.
- Evenly sprinkle remaining cheeses on top of meat.
- Top with second tortilla.
- Place a lid on top of skillet for 1 minute to melt cheese (it will be easier to flip this way).
- Remove lid.
- After the bottom tortilla is crispy and brown, gently flip the quessadilla.
- Once both sides are crispy and brown, remove rom the skillet.
- Wait approximately three minutes and cut the quessadilla into 4 pieces.
- Serve with your favorite mexican toppings!
