Black Bean Salad
- 1 cup chopped romaine lettuce
- 1 medium tomato, chopped
- 1/2 cup black beans cooked or canned without added salt
- 1 carrot, peeled and grated Target 2 lb For $3.00 thru 02/06
- 1 Tbsp. unsalted roasted soy nuts
- 2 Tbsp.
- 8 oz. low-fat (1%) yogurt, favorite flavor
- 8 fl oz (1 cup) drinking water
- Arrange lettuce and tomatoes on plate; top with black beans.
- Sprinkle carrots and soy nuts on top of salad.
- Drizzle with dressing.
- Enjoy with yogurt on the side.
- Serve a glass of water with the meal.
