Aubergine Relish Recipe

  1. Bake aubergine till soft.
  2. Grind together the baked aubergine, egg, green pepper and onion.
  3. Add in oil, vinegar and seasonings to taste.
  4. Chill.
  5. Serve cool.
  6. NOTES:* This is my mother's recipe - It can serve as either an appetizer or possibly a relish.
  7. Difficulty: easy.
  8. Time: 20 min baking, 5 min mixing.
  9. Precision: no need to measure.
