Cheesy Chicken & Vegetable Bake
- 1 pkg. (120 g) Stove Top Lower Sodium Stuffing Mix for Chicken, divided
- 1 cup hot water
- 1 lb. (450 g) boneless skinless chicken breasts, cut into bite-size pieces
- 1 can (10 fl oz/284 mL) low fat condensed cream of chicken soup
- 1/3 cup light sour cream
- 1 cup Cracker Barrel Shredded Light Mozza-Cheddar Cheese
- 3 cups frozen mixed vegetables (broccoli, carrots, cauliflower), thawed, drained
- Heat oven to 400F.
- Sprinkle 1/2 cup stuffing mix onto bottom of 13x9-inch baking dish.
- Add hot water to remaining stuffing mix; stir just until moistened.
- Place chicken in baking dish.
- Combine soup, sour cream, cheese and vegetables; spoon over chicken.
- Top with prepared stuffing.
- Bake 30 min.
