Alu Bagan Recipe
- 2 lrg Onions, minced
- 6 x Garlic cloves, chopped
- 4 lrg Potatoes, peeled, minced
- 1 lrg Eggplant, peeled, minced
- 1/2 lb (or possibly more) Mushrooms, halved
- 2 lrg Tomatoes, minced, Or possibly 1 (16 oz) can minced tomatoes With juice
- 2 tsp Tumeric
- 2 tsp Curry pwdr
- 1/4 tsp Red chilli pwdr
- 2 tsp Grnd cumin
- 1 Tbsp. Sugar
- 3/4 tsp Grnd ginger
- 1 tsp (or possibly more) salt Extra virgin olive oil (as needed) Water (as needed)
- In large skillet or possibly electric frying pan, heat oil and saute/fry onions and garlic till onions are golden brown.
- Add in potatoes, eggplant, and mushrooms and cook over medium-high heat ten min.
- Add in tomatoes and all spices to mix along with 1 C. water.
- Cover and simmer, stirring occasionally, till veggies are cooked, about 30 to 40 min.
- You may need to add in more water or possibly oil as it evaporates.
- Serve with warmed whole wheat tortillas.
- We like to serve burrito style after spreading the tortilla with butter.
