Orange Walnut Conserve

  1. Finely grate orange peel and set aside.
  2. Remove remaining pith and
  3. discard.
  4. Chp flesh and discard seeds.
  5. In a large saucepan cook orange flesh and water over low heat for 30
  6. minutes.
  7. Remove from heat.
  8. Measure 5 cups pulp.
  9. Add water if necessary
  10. to make correct measure.
  11. Prepare jars, lids and bands.
  12. In a large saucepan cook pulp, reserved peel, raisins and sugar over low heat.
  13. Stir until sugar dissolves.
  14. Increase heat and bring to a rapid
  15. boil.
  16. Boil hard for 20 minutes.
  17. Stir in walnuts and bring to a boil again.
  18. Ladle into prepared jars leaving a 1/4" headspace.
  19. Process jars for 10 minutes in a boiling water bath.
  20. Adjust time according to your altitude.
