Orange Walnut Conserve
- 2 lbs oranges
- 7 12 cups water
- 12 cup raisins
- 12 cup walnuts, coarsely chopped
- Finely grate orange peel and set aside.
- Remove remaining pith and
- discard.
- Chp flesh and discard seeds.
- In a large saucepan cook orange flesh and water over low heat for 30
- minutes.
- Remove from heat.
- Measure 5 cups pulp.
- Add water if necessary
- to make correct measure.
- Prepare jars, lids and bands.
- In a large saucepan cook pulp, reserved peel, raisins and sugar over low heat.
- Stir until sugar dissolves.
- Increase heat and bring to a rapid
- boil.
- Boil hard for 20 minutes.
- Stir in walnuts and bring to a boil again.
- Ladle into prepared jars leaving a 1/4" headspace.
- Process jars for 10 minutes in a boiling water bath.
- Adjust time according to your altitude.
