Food Haven Gumbo

  1. Roux:
  2. Use 1 1/2 cups of all purpose flour and blend into 1 1/2 cups hot oil or pork renderings to make dark brown roux (almost burned).
  3. Stir all the time roux is cooking, about 30 minutes.
