Food Haven Gumbo
- 1 garlic pod (not clove)
- 1 lb. okra, sliced
- 1 red bell pepper, chopped
- 1 lg. onion, chopped
- 1 can diced or stewed tomatoes
- 2 qt. water
- 4 cans chicken broth
- 5 lbs. seafood (3 lb. shrimp, 1 bay scallops, 1 other)
- Add some crab claws
- 1/2 lb. spicy sausage
- juice from 1/2 lemon
- 1 Tbsp. dried thyme
- 2 bay leaves
- 2 Tbsp. parsley
- 1 tsp. black pepper
- 1 tsp. cayenne pepper
- 1/2 cup white wine
- tbsp. Old Bay Seasoning
- 1 bunch green onions
- Roux:
- Use 1 1/2 cups of all purpose flour and blend into 1 1/2 cups hot oil or pork renderings to make dark brown roux (almost burned).
- Stir all the time roux is cooking, about 30 minutes.
