Double-Chocolate Sugar Cookies
- 1 (12 oz.) pkg. semi-sweet chocolate morsels, divided
- 1 c. butter or margarine, softened
- 1 c. sugar
- 1 large egg
- 2 Tbsp. milk
- 1 tsp. vanilla
- 3 c. all-purpose flour
- 1 tsp. baking powder
- 1/2 tsp. salt
- 1/2 c. sugar
- 1/2 tsp. soda
- Melt 1 cup chocolate morsels in a heavy saucepan over low heat, reserving remaining morsels.
- Set melted morsels aside. Beat butter at medium speed with an electric mixer until fluffy; gradually add 1 cup sugar, beating well.
- Add egg, milk and vanilla, mixing well.
- Add melted morsels, mixing until blended. Combine flour and next 3 ingredients; gradually add to butter mixture, mixing well.
- Stir in remaining chocolate morsels.
- Roll dough into balls, one tablespoon at a time.
- Roll balls in 1/2 cup sugar.
- Place on lightly greased cookie sheets.
- Bake at 400u0b0 for 8 to 10 minutes.
- (Cookies will be soft and firm up as they cool.) Remove to racks to cool.
- Yields 4 1/2 dozen.
