Angel Fruit Pie

  1. Preheat oven to 325F.
  2. Coarsely chop 6 of the cookies; set aside.
  3. Beat egg whites in medium bowl with electric mixer on high speed until soft peaks form.
  4. Combine sugar and baking powder; gradually add to egg whites, beating until stiff peaks form.
  5. Gently stir in chopped cookies.
  6. Arrange remaining 8 cookies on bottom of lightly greased 9-inch pie plate; top with egg white mixture.
  7. Bake 45 min.
  8. or until lightly browned.
  9. Turn oven off.
  10. Let pie stand in oven 15 min.
  11. Remove from oven.
  12. Cool completely.
  13. Add lemon peel to whipped topping; stir gently until well blended.
  14. Spoon into crust; top with fruit.
  15. Cut into 8 slices to serve.
  16. Store leftover pie in refrigerator.
