Angel Fruit Pie
- 14 Strawberry Shortcake NEWTONS Snackable Dessert Cookies, divided
- 4 egg whites
- 2/3 cup sugar
- 1 tsp. CALUMET Baking Powder
- 1 tsp. grated lemon zest Safeway 4 ct For $5.00 thru 02/09
- 1 cup thawed COOL WHIP LITE Whipped Topping
- 1 medium kiwi, peeled, sliced
- 1/2 cup canned mandarin orange segments, drained
- Preheat oven to 325F.
- Coarsely chop 6 of the cookies; set aside.
- Beat egg whites in medium bowl with electric mixer on high speed until soft peaks form.
- Combine sugar and baking powder; gradually add to egg whites, beating until stiff peaks form.
- Gently stir in chopped cookies.
- Arrange remaining 8 cookies on bottom of lightly greased 9-inch pie plate; top with egg white mixture.
- Bake 45 min.
- or until lightly browned.
- Turn oven off.
- Let pie stand in oven 15 min.
- Remove from oven.
- Cool completely.
- Add lemon peel to whipped topping; stir gently until well blended.
- Spoon into crust; top with fruit.
- Cut into 8 slices to serve.
- Store leftover pie in refrigerator.
