Cajun Ponchartrain Sauce Recipe
- 1/4 c. butter
- 8 x fresh mushrooms, sliced
- 8 med shrimp - peeled and deveined
- 1/4 c. whipping cream garlic pwdr to taste black pepper to taste
- 2 tsp Madeira wine
- In a medium saucepan, saute/fry mushrooms in 1 tsp.
- butter till tender.
- Stir in shrimp, and cook till pink.
- Transfer to a bowl.
- In the same saucepan, heat the remaining 2 tsp.
- butter.
- Slowly fold in cream.
- Stir in the shrimp and mushroom mix, and season to taste with garlic pwdr and black pepper.
- Simmer over very low heat till thick.
- Just before serving, stir in wine.
- Makes 2 servings.
