Sea-Fare Salad
- 1 c. macaroni
- 1 1/2 c. water
- 2 Tbsp. lemon juice
- 1 bay leaf
- 1 lb. frozen fillets of flounder or sole
- 1 (10 oz.) pkg. frozen mixed vegetables, cooked and drained
- 1 c. chopped celery
- 1 medium onion, chopped (1/2 c.)
- 1/2 c. bottled Italian style dressing
- 2 Tbsp. lemon juice
- 1/8 tsp. pepper
- 1/4 c. mayonnaise
- salad greens
- 1 medium cucumber, sliced
- Cook macaroni shells; drain well.
- Combine water, lemon juice and bay leaf in skillet; bring to boiling.
- Place frozen block of fillets in skillet.
- Cover.
- Simmer about 10 minutes or until fish just flakes; drain.
- Flake slightly with a fork.
- Cool.
- Combine macaroni, fish, mixed vegetables, celery and onion in a large bowl. Mix Italian style dressing with lemon juice and pepper; add to macaroni mixture.
- Toss salad lightly.
- Cover; refrigerate 3 hours or until well chilled.
- At serving time, add mayonnaise to mixture; toss lightly.
- Line a serving platter with salad greens; mound salad in center.
- Garnish with sliced cucumber.
