Slow Cooker Raspberry Chicken

  1. In a slow cooker, combine rice, chicken broth and ginger.
  2. In a small bowl, mix together the preserves and mustard; stir the mixture into rice and broth.
  3. Add chicken and pineapple to the slow cooker.
  4. Cover and cook on low for 3 to 4 hours or until liquid is absorbed and chicken is cooked.
  5. Serve topped with fresh raspberries.
