Fried Rice(Canton Style)
- 1 c. rice
- 2 carrots, peeled and cut into small pieces
- 1/2 c. green beans
- 1/2 c. corn
- 2 pieces sweet sausage, cooked and cut up
- 1 bunch scallions
- 1/4 lb. shrimp, cooked and cut up small
- 2 to 3 eggs
- 2 to 3 cloves garlic, minced
- 1/2 tsp. ginger
- 2 tsp. soy sauce
- 1/2 tsp. sugar
- salt to taste
- 1 to 3 Tbsp. peanut oil
- Cook the rice according to directions.
- Heat the oil in a wok or pan.
- Add garlic, vegetables and a little salt.
- Cook for 2 to 3 minutes, until the vegetables are cooked.
- Take them out of the pan and set aside.
- Add a little more oil to the wok.
- Then add the sausage and shrimp.
- Cook for 40 seconds.
- Add to plate of vegetables.
- Add more oil to pan, then ginger, white part of the onions and cooked rice.
- Fry them for awhile.
- Add the vegetables, sausage, shrimp and onion back to the wok.
- Fry them for awhile. Add soy sauce and sugar.
- Fry again until they look drier.
- At last, put the eggs into the fried rice.
- Fry until the eggs are cooked.
- At this moment, the fried rice smells very good.
- Serves 4 people.
