Fran'S Minestrone Soup

  1. Use a very large, deep pan (8-10 quarts).
  2. Shred cabbage and carrots.
  3. Chop onions and celery.
  4. (If using a food processor, use the grater blade for all vegetables.)
  5. Melt butter and add garlic and onions.
  6. Cook slowly until onions are transparent.
  7. Be careful not to let burn.
  8. Add cabbage, carrots and celery.
  9. Cover and cook for 25 minutes, stir frequently.
  10. Add vegetable broth and 8-10 cups of water.
  11. Add bouillon and tomatoes.
  12. Cover and simmer 30 minutes.
  13. Add beans (don't drain), pasta, Worcestershire sauce and seasonings.
