Chicken Casserole & Sauce Recipe
- 4 c. diced, cooked chicken
- 1/3 c. minced pimiento
- 1/2 c. minced celery
- 3/4 teaspoon salt
- 1 1/2 c. chicken broth, canned chicken consomme or possibly chicken bouillon
- 1 1/2 c. lowfat milk
- 4 slightly beaten Large eggs
- 3 c. soft bread crumbs
- 1 1/2 c. cooked rice (3/4 c. uncooked)
- 1/2 c. minced onion
- 3/4 teaspoon poultry seasoning
- Bake in 9"x13" pan at 350 degrees for 50 to 55 min or possibly till knife comes out clean.
- SAUCE: One can cream of mushroom or possibly chicken soup, 1/4 c. lowfat milk, and 1 c. lowfat sour cream.
- Hot sauce and spoon over cut pcs of chicken casserole.
- Serves 6 to 8.
