Fresh Mexican Corn Cobbette Salad With Avocado Dressing`
- 1 large bowl of fresh mixed spring salad
- 2 diced roma tomatoes
- 1/3 finely diced purple onion
- 1/2 finely diced jalapeno
- 1 bunch chopped cilantro
- 1 tbsp tajin seasoning
- 1 pinch garlic salt
- 1 pinch pepper
- 1/3 cup mexican cheese of choice
- 1 can mini corn cobs
- 1 cup tortilla strips
- 1/3 cup olive oil
- 1 avocado
- 1 tsp salt
- 1 pinch pepper
- 1/2 lime squeezed
- wash spring mix set in bowl.
- wash & rinse mini corn cobs drain & cut add to lettuce.
- Chop all other ingredients needed add spices, & garnish with cheese.
- Dressing: Add all ingredients to blender taste for seasoning .
- add to salad top with tortilla strips.
