Apple Cherry Crunch(Diabetic)

  1. Preheat oven to 350u0b0.
  2. Place chopped apples in medium bowl. Drain cherries; save juice.
  3. Add cherries to apples; set aside. In small saucepan combine cherry juice, cornstarch, 1/2 cup apple juice concentrate and 1/4 cup fructose.
  4. Stir over medium heat until thickened.
  5. Add almond and pour over fruit.
  6. Pour fruit mixture into 2-quart casserole which has been sprayed with vegetable spray.
