Apple Cherry Crunch(Diabetic)
- 3 medium cooking apples, peeled and chopped
- 1 can pie cherries (packed in water)
- 2 Tbsp. cornstarch
- 3/4 c. apple juice concentrate, divided
- 1/4 c. plus 2 Tbsp. granulated fructose, divided
- 2 tsp. almond flavoring
- 1 c. rolled oats
- 2 tsp. cinnamon
- 1/3 c. melted oleo
- nonstick vegetable cooking spray
- Preheat oven to 350u0b0.
- Place chopped apples in medium bowl. Drain cherries; save juice.
- Add cherries to apples; set aside. In small saucepan combine cherry juice, cornstarch, 1/2 cup apple juice concentrate and 1/4 cup fructose.
- Stir over medium heat until thickened.
- Add almond and pour over fruit.
- Pour fruit mixture into 2-quart casserole which has been sprayed with vegetable spray.
