Bean And Rice Chili
- 1 lb. ground beef
- 1 small green pepper, chopped
- 1 pkg. chili seasoning mix
- 1 1/2 c. water
- 1 (15 oz.) can kidney beans, drained
- 1 (4 oz.) can chopped green chiles, drained
- 1 (8 oz.) can tomato sauce
- 1 (7 oz.) can whole kernel corn, drained
- 1 1/2 c. Minute rice
- 1/4 c. shredded Cheddar cheese
- Brown ground beef in skillet; drain fat.
- Add green pepper and chili seasoning mix.
- Cook and stir until pepper is tender.
- Stir in water, beans and tomato sauce.
- Bring to boil.
- Reduce heat, cover and simmer 5 minutes, stirring occasionally.
- Add chiles and corn; bring to boil.
- Stir in rice; cover.
- Remove from heat. Fluff with fork and sprinkle with cheese.
