Fruity Topped Pizza
- 1 (20 oz.) roll refrigerator slice and bake sugar cookie dough
- 1/8 tsp. cinnamon
- 1 (8 oz.) pkg. reduced calorie cream cheese
- 1/4 c. skim milk
- 2 Tbsp. white sugar
- 1/2 tsp. vanilla extract
- 1/2 tsp. almond extract
- 3 to 4 varieties of fruit
- 1/2 c. apricot preserves
- 2 Tbsp. water
- 1/2 tsp. strawberry extract
- Cut cookie dough into 1/8-inch slices.
- Arrange cookie slices, slightly overlapping, on aluminum foil covered 14-inch pizza pan. Press edges to seal.
- Sprinkle with cinnamon.
- Bake at 375u0b0 for 12 to 15 minutes or until golden.
- Cool; remove from foil onto serving dish.
- Combine cream cheese, milk, sugar, vanilla and almond extracts until well blended.
- Spread over crust.
- Arrange fruit on cream cheese mixture.
- Glaze with combination of apricot preserves, water and strawberry extract.
- Cut into wedges.
- Makes 12 to 14 servings.
