Baked Beans
- 1 tablespoon olive oil
- 1 small onion, chopped
- 1 garlic clove, crushed
- 1 stalk celery, chopped
- 400 g haricot beans, rinsed and drained
- 250 g chopped tomatoes
- 4 teaspoons soy sauce
- 50 ml apple juice
- Heat oil and soften onion.
- Add garlic and celery and cook for another minute.
- Add tomatoes, beans, soy and juice.
- Simmer for 10 minutes until thickened.
