Southwestern Macaroni & Cheese
- 8 ounces (2 cups) uncooked dried rotini or fusilli
- 8 ounces Land O Lakes Deli American, chopped
- 1/2 cup milk
- 2/3 cup thick and chunky salsa
- 1 (15-ounce) can black beans, rinsed, well-drained
- 4 ounces (1 cup) shredded pepper jack cheese
- 2/3 cup chopped tomato
- 3 tablespoons sliced green onion
- Chopped fresh cilantro, if desired
- Heat oven to 350F.
- Cook pasta according to package directions; drain.
- Place cooked pasta into lightly greased 1 1/2-quart casserole dish; set aside.
- Combine cheese slices and milk in 2-quart saucepan.
- Cook over medium-low heat, stirring occasionally, 5-8 minutes or until cheese is melted.
- Stir in salsa.
- Pour cheese mixture over pasta; stir to combine.
- Top with black beans and pepper jack cheese.
- Bake 25-30 minutes or until bubbly around edges and cheese is melted.
- (Cover with aluminum foil if cheese is browning too quickly.)
- Garnish with chopped tomatoes, green onions and cilantro just before serving, if desired.
