Southwestern Macaroni & Cheese

  1. Heat oven to 350F.
  2. Cook pasta according to package directions; drain.
  3. Place cooked pasta into lightly greased 1 1/2-quart casserole dish; set aside.
  4. Combine cheese slices and milk in 2-quart saucepan.
  5. Cook over medium-low heat, stirring occasionally, 5-8 minutes or until cheese is melted.
  6. Stir in salsa.
  7. Pour cheese mixture over pasta; stir to combine.
  8. Top with black beans and pepper jack cheese.
  9. Bake 25-30 minutes or until bubbly around edges and cheese is melted.
  10. (Cover with aluminum foil if cheese is browning too quickly.)
  11. Garnish with chopped tomatoes, green onions and cilantro just before serving, if desired.
