Gnocchi in a Balsamic Reduction

  1. Heat a small saucepan over high heat and add balsamic vinegar.
  2. Allow vinegar to come to a boil them immediately reduce to a simmer.
  3. Simmer until vinegar reduces by half of the amount, about 810 minutes.
  4. Set aside and let cool.
  5. Heat a skillet on medium-low heat and add 1 tablespoon garlic butter.
  6. Add chopped peppers, onions and mushrooms and saute until soft, about 5 minutes.
  7. While veggies are cooking, boil water for gnocchi and cook according to directions; they only take a few minutes so make sure the veggies are almost finished cooking.
  8. Drain gnocchi and add to the veggies in the skillet.
  9. Add the vinegar reduction and remaining garlic butter and stir to combine.
  10. Top with parmesan if desired.
  11. Serve and devour!
  12. For the garlic basil butter: Combine ingredients in a bowl and mix to combine.
