Frozen Blueberry Creme
- 1 pkg. unflavored gelatin
- 1/4 c. cold water
- 1 c. fresh blueberries, washed and stemmed
- 1 c. plus 1/2 c. evaporated skim milk
- 1 Tbsp. sugar
- 1 Tbsp. lemon juice
- 9 pkt. sugar substitute
- Reserve a few blueberries for garnish.
- In a blender, puree remaining berries with 1 cup evaporated skim milk, sugar substitute, and sugar.
- In a saucepan, sprinkle gelatin over cold water.
- Dissolve gelatin over low flame.
- Remove from heat and stir in lemon juice.
- Stir gelatin mixture into blueberry mixture.
- Whip remaining 1/2 cup evaporated milk until thick but not stiff.
- Fold into blueberry mixture.
- Pour into 2-quart bowl.
- Freeze for several hours, stirring occasionally, until mushy.
- Spoon into dessert dishes while still soft.
- Garnish with blueberries.
- Serves 8.
