Frozen Blueberry Creme

  1. Reserve a few blueberries for garnish.
  2. In a blender, puree remaining berries with 1 cup evaporated skim milk, sugar substitute, and sugar.
  3. In a saucepan, sprinkle gelatin over cold water.
  4. Dissolve gelatin over low flame.
  5. Remove from heat and stir in lemon juice.
  6. Stir gelatin mixture into blueberry mixture.
  7. Whip remaining 1/2 cup evaporated milk until thick but not stiff.
  8. Fold into blueberry mixture.
  9. Pour into 2-quart bowl.
  10. Freeze for several hours, stirring occasionally, until mushy.
  11. Spoon into dessert dishes while still soft.
  12. Garnish with blueberries.
  13. Serves 8.
