Holiday Potato Salad Recipe
- 6 med. potatoes
- 1 med. onion, minced
- 1 pimento, minced
- 1/2 c. minced dill pickle
- 1/2 c. dill pickle liquid
- 4 strips bacon, cooked crisp and crumbled
- 2 hard-cooked Large eggs, minced
- 1/2 c. salad dressing
- 1 teaspoon prepared mustard
- 3/4 c. mayonnaise
- 1 teaspoon celery seed
- Salt and pepper to taste
- Boil potatoes in their jackets till just tender; drain.
- When cold, peel and dice into mixing bowl.
- Add in onion, pimento, dill pickle and liquid, bacon and Large eggs; toss gently till well mixed.
- Blend salad dressing and mustard together.
- Add in to salad and add in just sufficient mayonnaise to moisten mix nicely.
- Add in remaining ingredients.
- Toss gently.
- Cover and refrigeratethoroughly before serving.
- Makes 6 to 8 servings.
