Vegetarian Chili
- 2 1/2 c. kidney beans, cooked
- 1 c. tomato juice
- 4 cloves garlic, crushed
- 1 1/2 c. chopped onion
- 1 c. chopped celery
- 1 c. chopped carrots
- 1 c. chopped green peppers
- 2 c. fresh tomatoes
- juice of 1/2 lemon
- 1 tsp. cumin
- 1 tsp. basil
- 1 Tbsp. chili powder (more, if desired)
- 3 Tbsp. tomato paste
- 3 Tbsp. dry red wine
- 3 Tbsp. olive oil
- salt, pepper and cayenne to taste
- Saute onion and garlic in olive oil. Add carrots, celery and spices. When vegetables are tender, add green peppers.
- Cook until done. Combine all other ingredients and heat together gently either in kettle or moderate oven, covered.
- Serve topped with grated cheese.
