Calico Corn Muffins
- 1 cup yellow cornmeal
- 1 cup flour
- 1/4 cup sugar
- 1 Tbsp. baking powder
- 1/4 tsp. ground red pepper, optional
- 1 cup milk
- 1 egg, beaten
- 1/4 cup 53% vegetable oil spread, melted
- 1 cup canned or frozen corn
- 1/4 cup chopped red bell pepper Target 1 pkg For $2.99 thru 02/06
- 1/4 cup chopped green onion
- Combine cornmeal, flour, sugar, baking powder and red pepper in medium bowl.
- Stir in milk, egg and spread just until blended.
- (Batter will be slightly lumpy).
- Stir in corn, chopped red pepper and green onions just until mixed.
- Spoon mixture into 12 lightly greased 2 1/2-inch muffin-pan cups.
- Bake at 400F for 20 to 25 minutes or until done.
- Remove from pan.
- Cool slightly on wire rack.
- Serve warm or at room temperature.
