Strawberry Pizza
- 1 c. self-rising flour
- 1/2 c. melted margarine
- 14 oz. sweetened condensed milk
- 1/2 c. sugar
- 1/2 c. water
- red food coloring (optional)
- 1/4 c. powdered sugar
- 8 oz. cream cheese, soft
- 1/3 c. lemon juice
- 1 tsp. vanilla extract
- 2 Tbsp. cornstarch
- 2 pt. strawberries, halved
- Combine flour and powdered sugar.
- Add margarine, mixing well. Pat dough out in a 14-inch pizza pan.
- Bake at 350u0b0 for 10 minutes or until lightly browned.
- Combine cream cheese, condensed milk, lemon juice and vanilla.
- Mix well and spread on cooled crust. Chill thoroughly.
- Combine sugar and cornstarch in large saucepan; add water, mixing until smooth.
- Cook over medium heat until thickened (about 5 minutes), stirring constantly.
- Add strawberries; stir in food coloring.
- Cool completely.
- Spread strawberries and mixture over cream cheese layer and chill.
- Cut into wedges to serve.
- Yields 8 to 10 servings.
