The Fluffiest Creamiest Scrambled Eggs
- 1 tbsp butter
- 6 eggs
- 1/4 tsp salt
- 1/8 tsp pepper
- 1 dash hot sauce such as sriracha, optional
- 1 tbsp heavy cream or half and half
- In a large bowl, beat eggs with the salt and pepper, cream and sriracha if using until frothy.
- Use a fork or hand mixer.
- In a skillet over medium heat , get pan hot.
- Add butter and allow to melt and cook 1 minute.
- Add beaten eggs and let cook in pan undisturbed for 30 seconds.
- With a spatula, start to pull eggs in toward the center of the pan from the pans edges.
- Keep repeating this step until most of the eggs are cooked but still very moist looking.
- Turn off heat.
- The heat left in the pan will continue to gently finish the cooking process.
- Just keep stirring until you get them cooked through.
- I like to leave the eggs still a bit "moist" looking.
- Over cooking can cause eggs taste and texture to be rubbery.
