Cheesy Artichoke Squares
- 1 tsp. butter or margarine
- 2 (6 oz.) jars marinated artichoke hearts
- 1 small clove garlic
- 1/2 small onion, chopped fine
- 2 tsp. parsley
- 4 large eggs
- 1/4 c. dried bread crumbs
- 1/4 tsp. salt
- 1/8 tsp. Tabasco sauce
- 1/2 lb. Cheddar cheese, grated
- Butter an 8 x 8-inch glass pan with 1 teaspoon butter or margarine.
- Saute onion, garlic and parsley in a little butter until onion is translucent.
- Meanwhile, drain and chop artichoke hearts.
- While they are still "draining," beat eggs until they are light.
- Add bread crumbs and seasonings.
- Mix well.
- Stir in cheese, sauteed onion, garlic and parsley and artichoke hearts. Put in greased pan.
- Bake 35 minutes at 325u0b0, until it feels firm to touch.
- Let stand 15 minutes before cutting into squares.
