Curried Salmon Casserole Recipe
- 1 can (7 3/4 ounce.) salmon
- 1/4 c. minced green pepper
- 2 tbsp. minced onion
- 1 tbsp. butter
- 1 tbsp. flour
- 1/2 teaspoon curry pwdr
- 1/2 c. cooked mixed vegetables
- 1 c. buttermilk baking mix
- 1/4 c. grated Cheddar cheese
- 1/3 c. lowfat milk
- Drain and flake salmon, reserving liquid.
- Saute/fry green pepper and onion in butter till tender.
- Blend in flour and curry pwdr.
- Add in lowfat milk to reserved salmon liquid to measure 1 c.. Add in to skillet.
- Cook, stirring constantly, till smooth and thickened.
- Add in vegetables and salmon.
- Turn into 1 qt casserole.
- Combine baking mix and cheese.
- Add in lowfat milk and stir till soft dough is formed.
- Drop by spoonfuls onto salmon mix.
- Bake at 425 degrees for 20-25 min or possibly till golden.
