Bacon Sliders and Shoestring Fries

  1. For the bacon sliders: Mix together bacon slider ingredients in a bowl with your hands.
  2. Add salt and pepper to taste.
  3. Roll into a ball just larger than a golfball and then compress to a disc.
  4. BBQ on medium heat 5 minutes each side.
  5. To assemble the sliders, place patties on a bun and top with a quarter slice of cheese if desired and any other topping you prefer.
  6. For the shoestring potatoes: On the shoestring setting of a mandoline, slice potatoes and place in a large bowl of water to keep from browning.
  7. Dry very well before placing in the oil.
  8. Heat oil in a wok, test with one tiny potato until, when dropped in, it quickly floats back up bubbling.
  9. Fry small amounts of potatoes at a time until golden.
  10. Drain on a paper towel-lined plate and salt immediately.
  11. Keep warm in a 200 degrees F oven while cooking the rest of the potatoes.
