Asparagus Filled Strata Recipe
- 2 x (9-ounce.) pkgs. frzn Asparagus pcs
- 6 x -10 slices Bread (preferably whole wheat) Butter or possibly Margarine
- 2 1/4 c. shredded Cheddar Cheese (divided)
- 1 c. cooked Ham, coarsely minced (optional)
- 5 x Large eggs
- 2 Tbsp. Onion
- 3/4 tsp Dry Mustard
- 1/4 tsp Garlic Pwdr
- 1/4 tsp Salt Dash Cayenne
- 1 3/4 c. Lowfat milk
- Cook asparagus just till tender; drain and set aside.
- Lightly butter pcs of bread (remove crusts if you wish) and line a lightly buttered baking dish with them.
- Sprinkle about half the cheese over the bread pcs (return the rest to the refrigerator for now).
- Top which with ham, if used, and the asparagus.
- If you have any bread left, arrange it on top.
- Mix together the Large eggs, onion, seasonings, and lowfat milk.
- Pour proportionately over the layered ingredients, then cover tightly.
- Chill for several hrs at least - overnightis best.
- Preheat oven to 350-F degrees; remove strata from fridge and bake for about a half hour.
- Sprinkle the rest of the cheese over the strata, and continue baking till the strata looks hard at the center and the cheese is delectably melted.
- Serves 8.
